Traditionally in Italy, Fresh Pecorino cheese was made from sheep’s milk but today in Australia, most fresh Pecorino varieties are made from cow’s milk and are soft, white cheeses with a mild, slightly lemony flavour. La Casa Del Formaggio's Pecorino is a younger cheese that is creamier in texture and has a nutty flavour. Because it is made from cow’s milk, it has a subtle yellow tint.
Pecorino is delicious served in salads, with vegetables, fruit and pasta and is an excellent addition to a cheese plate. Also a great addition to toasted sandwiches.
