  1. Bring the water for the pasta to a boil. While waiting, pour the olive oil in a frying pan, and add bacon. Fry until the bacon is light brown, but still soft.
  2. In a serving bowl large enough to contain the pasta, beat the eggs with a pinch of salt.
  3. Add a bit of salt to boiling water and cook pasta until it is al dente.
  4. Drain the pasta and drop it immediately into the bowl over the beaten eggs. Mix vigorously. The heat of the boiling pasta will cook the eggs, making them resemble a cream.
  5. Add bacon and cooking juices from the fying pan. Also add the Grated Pecorino and optional pepper. Mix to combine and serve hot.
