Traditionally in Italy, Pecorino cheese was made from sheep’s milk, however today in Australia, most fresh Pecorino varieties are made from cow’s milk and are soft, white cheeses with a mild, slightly lemony flavour. La Casa Del Formaggio's Pecorino is a younger cheese that is creamier in texture and has a nutty flavour. Because it is made from cow’s milk, it has a subtle yellow tint. Piccantino or Chilli Pecorino has an obvious chilli flavour and is still a young, soft and creamy cheese.
