In 2014, our business made the decision to take control of our supply of our largest manufacturing input: our milk. We sought to offer a different sourcing model than the traditional large corporation supply relationship that was most common at this time.
In its inception, our team began working closely with six family farms. This number continues to grow every year as our milk supply demands increase. We aim to build direct relationships with our farms and to work as closely with our farmers as possible. La Casa Del Formaggio believes that for these partnerships to succeed, we must do three things:
We hand pick a selection of friesian and jersey herds to blend the perfect milk composition for our cheesemaking. La Casa Del Formaggio chooses family farms that hold similar values to our family business, and those that have a reputation for high quality milk. We take pride that we have created a sense of community with our milk supplying families by holding regular meetings and social events to stay connected.
All of our milk partners are required to adhere to the La Casa Del Formaggio Quality Standards to ensure food safety, hygiene and quality parameters are achieved.
