120g | Button Mushrooms |

Mediterranean Marinade

2 cloves | garlic, minced |
1 Tbsp | Extra Virgin Olive Oil |
1 | Combine marinade ingredients in a bowl and set aside to allow flavours to develop. |
2 | Cut pumpkin into cubes. Grill on a hotplate until pumpkin is cooked through and caramelised. |
3 | Slice mushrooms into thirds. Grill mushrooms on the hotplate until cooked and colour darkens. |
4 | Toss bocconcini in with Mediterranean marinade. |
5 | Mix cheese, pumpkin and mushrooms together in a large bowl and sprinkle with pepitas. Dress with olive oil, salt and pepper to taste. |
