Grilled Pumpkin, Bocconcini and Mushroom Salad

Makes 2 main-sized salads or 4 side salads.




200g Bambini Bocconcini
550g Pumpkin
120g Button Mushrooms
1 Tbsp Pepitas
2 Tbsp Extra Virgin Olive Oil
Salt and Pepper to taste
Mediterranean Marinade
basil, chopped
oregano, chopped
2 cloves garlic, minced
1 Tbsp Extra Virgin Olive Oil


1 Combine marinade ingredients in a bowl and set aside to allow flavours to develop.
2 Cut pumpkin into cubes. Grill on a hotplate until pumpkin is cooked through and caramelised.
3 Slice mushrooms into thirds. Grill mushrooms on the hotplate until cooked and colour darkens.
4 Toss bocconcini in with Mediterranean marinade.
5 Mix cheese, pumpkin and mushrooms together in a large bowl and sprinkle with pepitas. Dress with olive oil, salt and pepper to taste.
