This season on Open Homes Australia, Adam Swanson is cooking up some wonderful recipes with La Casa Del Formaggio Cheeses. Episode 4 featured his recipe for a Tuna Insalata. This beautifully cooked fresh tuna pairs perfectly with a light bocconcini salad.

220g Traditional Bocconcini
2 x 200g fresh tuna steaks
extra virgin olive oil
salt and pepper
6 ripe tomatoes, cuti into quarters
1 celery (inner small stalks)
basil leaves, to garnish
1/4 cup white balsamic

1 Heat a griddle pan on high. Coat tuna with a little olive oil and salt & pepper.
2 Place tuna into the pan and cook for 2 minutes on each side. Remove from the pan and allow to cool a on a plate.
3 To make salad, cut the tomatoes into small chunks and place into a large bowl.
4 Next tear pieces of bocconcini into the bowl. Slice the inner of the celery into small pieces and add celery leafs too.
5 Finally break the tuna into pieces and tear the basil leafs into salad. Drizzle with a good amount of olive oil and balsamic. Add salt & pepper to taste. Gently toss together and serve.
