Amazing Grazing!

We sure do love a good grazing platter! And let’s face it, everyone is doing them this time of year.

Brief: create the ultimate antipasto platter to share with your friends and family this holiday season!

Hero products: Bocconcini, Burrata, Mascarpone

Style: antipasto, colourful, fresh

Tips:

  • Quality is key! Veg and fruit must be fresh
  • Use the rule of 3: 3 cheeses, 3 meats, 3 veg, etc
  • Include a variety of salty and sweet
  • Vary the texture, heights, and colour for high impact
  • Beat the heat: if it is a particularly hot day and you are entertaining outside, split your platter contents into two trays. Store the reserve tray in the fridge and swap them out halfway through the party.

Sweet includes fruit, and Mascarpone spread onto dried figs and drizzled with honey

Think about including:

  • Cheeses: Burrata, Bocconcini, and Mascarpone globs on dried figs maybe with drizzle of honey or next to honeycomb. Perhaps add a Parmesan hunk for a matured cheese for depth of flavour
  • Veg: keep it practical and ones you can dip are best
  • Fruit: a mix of fresh and dried always goes down a treat!
  • Salty: nuts placed in clusters, olives, meats (prosciutto, salami, sorpressa)
  • Dips: mix it up! But think about flavours that complement your spread
  • Crackers: use two different types + fresh bread, which is key
  • Garnish: a sprig of something green goes a long way visually
