Our panini begins with our fresh and fluffy Bocconcini Focaccia and then gets stacked with sopressa, ham and pesto – to bring bold Italian flavours with every bite.

| 16 slices | sopressa |
| 4 slices | ham |
| 2 cup | rocket leaves |
| 1/4 cup | basil leaves |

for pesto

| 1 | garlic clove |
| 2 tbsp | pinenuts |
| 2 cups | basil leaves |
| 1/4 cup | olive oil |
| 2 tbsp | Grated Parmesan |
| 1 | For pesto, pound garlic in a small mortar and pestle, add pinenuts and pound until a rough paste forms. |
| 2 | Add basil leaves and pound until a paste forms. |
| 3 | Drizzle in olive oil and mix until incorporated. |
| 4 | Add parmesan and mix through. |
| 5 | Cut 4 rectangles of focaccia in half horizontally. |
| 6 | Spread the bases with a generous amount of pesto. |
| 7 | Add sopressa, ham, rocket and basil leaves. |
| 8 | Add the focaccia top and serve immediately. |
