Ingredients

1 packet Mozzarella Stretchy String Sticks
1/4 cup flour
1 egg
2 tbsp milk
3/4 cup panko breadcrumbs
olive oil spray
for napolitana sauce
2 tbsp olive oil
1/2 onion, finely chopped
1 garlic clove, finely chopped
400g tinned tomato
6 basil leaves + extra to garnish
sea salt & cracked black pepper

Preparation

1 For the napolitana sauce, heat a small saucepan over medium heat, add olive oil, onion and garlic and sauté until softened.
2 Add tomato, basil, season with salt and pepper and simmer for 15 minutes.
3 Meanwhile, create a crumbing station by placing flour onto a small plate, whisking together egg and milk in a small bowl and placing breadcrumbs on a small plate.
4 Working one at time, roll the mozzarella stick in flour, dip in the egg mix to coat, roll in the breadcrumbs, return to the egg mix to coat and finally roll in the breadcrumbs.
5 Preheat air fryer to 200°C for 10 minutes, spray the crumbed sticks liberally with olive oil and air fry for 4 minutes, turning half way through.
6 Serve garnished with basil and with napolitana sauce on the side.
