The Risoni soaks up the rich pork and tomato sauce, and is topped with golden Haloumi for a warm, satisfying finish.
It’s a simple, comforting dish perfect for cozy nights in and sharing straight from the pan.
| 6 slices | Haloumi |
| 2 tbsp | olive oil |
| 1 | onion, finely sliced |
| 2 | garlic cloves, finely chopped |
| 2 tsp | dried oregano |
| 500g | pork mince |
| 700g | passata |
| 1 cup | Risoni |
| 1/4 cup | parsley leaves, torn |
| sea salt and cracked black pepper |
| 1 | Heat one tbsp of olive oil in a large oven proof pan over medium heat, add onion and sauté until softened. |
| 2 | Add garlic and oregano and sauté for two minutes. |
| 3 | Add pork mince, break up with a wooden spoon and cook until beginning to colour. |
| 4 | Add passata, season with salt and pepper and simmer for 15 minutes. |
| 5 | Add Risoni and simmer for 10 minutes, adding a little water if it dries out too much. |
| 6 | Preheat oven grill, place haloumi on top of the pasta, drizzle with the remaining olive oil and grill until the haloumi is warm and golden. |
| 7 | Serve garnished with parsley. |
