The Risoni soaks up the rich pork and tomato sauce, and is topped with golden Haloumi for a warm, satisfying finish.

It’s a simple, comforting dish perfect for cozy nights in and sharing straight from the pan.

Ingredients

6 slices Haloumi
2 tbsp olive oil
1 onion, finely sliced
2 garlic cloves, finely chopped
2 tsp dried oregano
500g pork mince
700g passata
1 cup Risoni
1/4 cup parsley leaves, torn
sea salt and cracked black pepper

Preparation

1 Heat one tbsp of olive oil in a large oven proof pan over medium heat, add onion and sauté until softened.
2 Add garlic and oregano and sauté for two minutes.
3 Add pork mince, break up with a wooden spoon and cook until beginning to colour.
4 Add passata, season with salt and pepper and simmer for 15 minutes.
5 Add Risoni and simmer for 10 minutes, adding a little water if it dries out too much.
6 Preheat oven grill, place haloumi on top of the pasta, drizzle with the remaining olive oil and grill until the haloumi is warm and golden.
7 Serve garnished with parsley.
