Ingredients

1 packet Mozzarella Stretchy String Sticks
4 slices prosciutto, sliced in half lengthways
300g cherry tomatoes on the vine
3 tbsp olive oil
seal salt and cracked black pepper
1/2 shallot, finely chopped
1 garlic clove, finely chopped
1 tsp thyme leaves
1/2 cup marinated mixed olives
300g grissini
basil leaves, to garnish

Preparation

1 Preheat oven to 160°C. Place tomatoes on a baking paper lined baking tray, drizzle with 1 tbsp olive oil, season with salt and pepper, roast for 20 minutes and set aside to cool to room temperature.
2 Mix the remaining olive oil, shallot, garlic and thyme in a small bowl.
3 To assemble, wrap the mozzarella sticks in prosciutto and place onto a serving plate.
4 Add a bowl of olives, grissini and the cherry tomatoes.
5 Drizzle the shallot dressing over the tomatoes and serve garnished with basil leaves.
