Notes

We love this recipe for so many reasons.  Not only is it absolutely delicious and soooo addictive, the zucchini fries are baked and not fried, and it’s a great way to enjoy an extra serve of veggies.  This might just in fact be your new favourite way to eat zucchini.  Loaded with flavour and baked to golden perfection!

Ingredients

1/2 cup Grated Parmesan
2 x zucchini (large)
1/2 cup panko crumbs
1/2 tsp salt
1 x egg
olive oil spray

Preparation

1 Preheat oven to 200degrees. Line a large baking tray with baking paper.
2 Cut zucchini 1cm thick batons. Place in a colander & sprinkle with salt & toss to coat. Set aside for 10 minutes to drain & then pat dry with paper towel.
3 Combine parmesan & panko crumbs in a bowl. Place egg in in a separate bowl & whisk.
4 Working in batches, dip zucchini batons in egg, draining off excess. Toss in parmesan & panko mixture to coat.
5 Place, in a single layer, on the prepared tray and spray with olive oil. Bake, turning chips every 10 minutes for 25-30 minutes or until golden and crisp.
