This fresh sandwich is a perfect light lunch for spring. Bonus points for getting your greens in, well done you.
You absolutely need this Green Goddess sauce in your life. Pretty soon you will be adding it to everything from salads, to roasted vegetables, it even makes the perfect drizzle to serve over a quiche!
The Fresh Mozzarella adds a wonderful texture, and helps to carry the flavours of avocado, lemon juice, tarragon and chives beautifully. Be sure to use fresh, premium wholegrain bread, with a nice soft texture.
This recipe makes three sandwiches. Pack these babies to enjoy on a picnic, surrounded by sunshine and beautiful spring weather!
Green Goddess Sauce

¼ cup | mayonnaise |
¼ cup | Greek Yoghurt |
¼ cup | chives, chopped |
¼ cup | tarragon, chopped |
1 | lemon |
3 Tbsp | extra virgin olive oil |

Sandwich
|

125g | Fresh Mozzarella Bag |
1 | cucumber |
½ head | butter lettuce |
1 | avocado |
6 | slices of wholegrain bread |
1 cup | sprouts |
1 | Blend the mayonnaise, Greek yoghurt, chives and tarragon together in a blender or food processor. Slice the lemon in two, and add the zest and juice of one half to the sauce. Next, add the two tablespoons of extra virgin olive oil, and season with salt and pepper to the mixture. Then blend until smooth. |
2 | Cut the cucumber into slices and separate the lettuce leaves. Place them into a bowl and drizzle with remaining oil, lemon juice and seasoning. Mix together until coated. |
3 | Smash the avocado and season. Spread onto three slices of bread. Next stack the cucumber and lettuce on these slices. |
4 | Cut the Fresh Mozzarella into slices and add to the sandwiches. Top with the sprouts. Then spread a generous amount of the Green Goddess Sauce onto the remaining three bread slices, and close each sandwich. Cut each sandwich in half and serve. |
