1 packet | Mozzarella Stretchy String Sticks |
4 slices | prosciutto, sliced in half lengthways |
300g | cherry tomatoes on the vine |
3 tbsp | olive oil |
seal salt and cracked black pepper | |
1/2 | shallot, finely chopped |
1 | garlic clove, finely chopped |
1 tsp | thyme leaves |
1/2 cup | marinated mixed olives |
300g | grissini |
basil leaves, to garnish |
1 | Preheat oven to 160°C. Place tomatoes on a baking paper lined baking tray, drizzle with 1 tbsp olive oil, season with salt and pepper, roast for 20 minutes and set aside to cool to room temperature. |
2 | Mix the remaining olive oil, shallot, garlic and thyme in a small bowl. |
3 | To assemble, wrap the mozzarella sticks in prosciutto and place onto a serving plate. |
4 | Add a bowl of olives, grissini and the cherry tomatoes. |
5 | Drizzle the shallot dressing over the tomatoes and serve garnished with basil leaves. |
