Roast Vegetable and Mozzarella Souvlaki Stack

Look at all that gooey Mozzarella! Looking for a fun, new toastie recipe? Try this souvlaki stack, its packed full of roasted veggies and of course our cheesy Mozzarella Ball!

For more of a Mediterranean taste, add a handful of halved pitted kalamata olives and a sprinkle of dried oregano.

Ingredients

1 Mozzarella Ball
Pack of 5 souvlaki bread
2 zucchini (sliced thinly)
1 red onion (sliced)
1 jar marinated capsicum
salt and pepper

Preparation

1 Preheat oven to 180 degrees Celsius. Thinly slice zucchinis, drizzle with olive oil and season with salt and pepper and roast for 10-12 minutes.
2 Slice onion and pan fry until golden. In the meantime, generously slice the Mozzarella Ball.
3 Stack souvlaki bread with slices of Mozzarella, followed by another souvlaki bread. The next layer should be roasted capsicum and onion. Sprinkle with salt and pepper. Cover with another layer of bread, followed by zucchini, and then another layer of bread. The final layer should be Mozzarella for extra cheesiness, top it off with one more souvlaki bread.
4 Place the stack into oven at 180 degrees Celsius for 8-10 minutes. Remove from the oven and slice into quarters. Enjoy Warm!
