A comforting take on a classic, this Winter Caprese is warm, rich and full of flavour!
Roasted tomatoes, creamy Fresh Mozzarella and sticky balsamic onions, come together with a hint of thyme and crunchy breadcrumbs.
This recipe is an easy yet elegant dish for winter entertaining or relaxed nights in.
| 2 | Fresh Mozzarella |
| 300g | cherry tomato on the vine |
| 6 | thyme sprigs |
| 1 tbsp | olive oil + extra to garnish |
| 150g | baby pickled cocktail onions |
| 1/4 cup | balsamic vinegar |
| 1/4 cup | toasted breadcrumbs |
| sea salt & cracked black pepper |
| 1 | Preheat oven to 180°C, place tomatoes and thyme onto a baking paper lined oven tray, drizzle with one tbsp olive oil and roast for 20 minutes or until beginning to collapse. |
| 2 | Drain pickled onions and place into a small saucepan with balsamic vinegar set over medium heat and simmer until the vinegar reduces and coats the onions, about five minutes. |
| 3 | Cut Fresh Mozzarella into thick slices and place onto a serving plate, add roasted tomatoes, thyme and balsamic onions. |
| 4 | Sprinkle over breadcrumbs and drizzle with olive oil. |
