A vibrant mix of tomatoes, plums, Sicilian olives and crushed pistachios – perfectly paired with creamy Burrata that turns this salad into a true centerpiece.

| 2 x 150g | Burrata |
| 300g | assorted plums, cut into wedges |
| 1 punnet | assorted cherry tomatoes, halved |
| 1 cup | watercress leaves |
| 1/2 cup | pitted Sicilian olives, halved |
| 1/4 cup | pistachio kernels, roughly chopped |
| 1 tsp | dukkah |

for dressing
|
|
| 1/4 cup | olive oil |
| 2 tbsp | white balsamic vinegar |
| 1 tsp | Dijon mustard |
| pinch of sea salt |
| 1 | Mix dressing ingredients together in a small bowl. |
| 2 | Arrange plums, tomatoes, watercress and olives onto a serving plate. |
| 3 | Nestle the Burrata's in the salad. |
| 4 | Drizzle with dressing and scatter over pistachio and dukkah. |
