| 3 x 200g | Fresh Mozzarella |
| 4 | large ripe tomatoes |
| sea salt, to taste | |
| freshly cracked black pepper, to taste | |
| extra virgin olive oil | |
| balsamic vinegar | |
| 1 bunch | basil |
| fresh bread or crackers to serve |
| 1 | Slice the Fresh Mozzarella balls and tomatoes into large circles approximately 1 centremetre thick. Retain the end bits to use for decor (see last step). |
| 2 | In an alternating pattern, layer the slices in the shape of a candy cane (an upside down "J"). |
| 3 | Season with salt and pepper. Drizzle with oil and vinegar, or serve in small dipping dishes. |
| 4 | Scatter the basil on the serving platter. Slice up fresh bread and serve. |
| 5 | BONUS: To make your platter extra festive, use small cookie cutters to shape your offcuts of Fresh Mozzarella into festive shapes for decorating/eating! |
