We all know Bocconcini melts beautifully on a pizza but have you ever thought about adding it to your garlic bread? This cheery, cheesy recipe leaves the store-bought stuff in its’ dust. And it is super easy to make as well!

Ingredients

220g Traditional Bocconcini
200g butter, softened
6 garlic cloves, minced
2 Tbsp finely chopped parsley
1 ciabatta loaf

Preparation

1 Preheat oven to 175°C.
2 Combine butter, garlic and parsley in a bowl. Season with salt and pepper.
3 Slice bread in half lengthwise. Place the inner loaf sides face up. Spread the mixture over the bread pieces, and then put the loaf back together. Wrap the entire loaf in foil.
4 Bake in foil for 15 minutes. Then remove from oven and change oven setting to "grill."
5 Tear bocconcini into strips. Open up the loaf and place the bocconcini strips across the buttered sides. Then place halves buttered-side up on a baking tray and grill until the cheese is melted.
6 Remove from oven and allow to cool slightly. Cut the halves into slices to serve.
