Caprese Candy Cane

This Caprese Candy Cane platter is a super easy salad for Christmas day that can double as your festive table centrepiece!




3 x 200g Fresh Mozzarella
4 large ripe tomatoes
sea salt, to taste
freshly cracked black pepper, to taste
extra virgin olive oil
balsamic vinegar
1 bunch basil
fresh bread


1 Slice the Fresh Mozzarella balls and tomatoes into large circles approximately 1 centremetre thick. Retain the end bits to use for decor (see last step).
2 In an alternating pattern, layer the slices in the shape of a candy cane (an upside down "J").
3 Season with salt and pepper. Drizzle with oil and vinegar, or serve in small dipping dishes.
4 Scatter the basil on the serving platter. Slice up fresh bread and serve.
5 BONUS: To make your platter extra festive, use small cookie cutters to shape your offcuts of Fresh Mozzarella into festive shapes for decorating/eating!
