Caprese Salad with Bocconcini

Enjoy the simple things with an elegant Caprese salad,  featuring our fresh bite sized Bambini Bocconcini.

Ingredients

220g Bambini Bocconcini
400g tomato medley
200g snacking tomatoes
fresh basil leaves
handful baby spinach leaves (optional)
pink Himalayan salt and black pepper
Dressing
1 tsp Dijon mustard
2 tsp honey
pinch sea salt
2 tbsp olive oil
1 tbsp balsamic vinegar

Preparation

1 Slice tomatoes in half and mix with the Bocconcini.
2 Add a handful of spinach and basil leaves. Season with freshly ground Himalayan salt and black pepper.
3 Whisk together all dressing ingredients and drizzle over the salad.
4 Enjoy with fresh crusty bread or crackers.
