| 200g | snacking tomatoes |
| fresh basil leaves | |
| handful | baby spinach leaves (optional) |
| pink Himalayan salt and black pepper | |

Dressing

| 1 tsp | Dijon mustard |
| 2 tsp | honey |
| pinch | sea salt |
| 2 tbsp | olive oil |
| 1 tbsp | balsamic vinegar |
| 1 | Slice tomatoes in half and mix with the Bocconcini. |
| 2 | Add a handful of spinach and basil leaves. Season with freshly ground Himalayan salt and black pepper. |
| 3 | Whisk together all dressing ingredients and drizzle over the salad. |
| 4 | Enjoy with fresh crusty bread or crackers. |
