When you feel like a Bruschetta but also feel like pizza – we give you, the Bruschettina!

A delicious pizza style bruschetta which is the perfect antipasto for those cold nights.

This recipe is super simple and quick to make, and uses our Cherry Bocconcini for the perfect cheesy melt.

Ingredients

1 x 220g tub Cherry Bocconcini
1 x large red onion
250g cherry tomatoes
100g prosciutto
half jar pizza sauce
5 x rolls of choice
handful of fresh basil
olive oil
salt and pepper

Preparation

1 Half tomatoes and Bocconcini. Cut onion into half and then slice lengthwise.
2 Pour tomatoes and onion into an oven tray, sprinkle with salt and pepper and drizzle with oil. Roast in pre-heated oven at 180°C degrees for 8 minutes.
3 Cut rolls in halves and place onto the baking tray and bake for 5 minutes.
4 Cover your halved rolls with pizza sauce, roast onions and tomatoes, pieces of Prosciutto and Bocconcini. Place into oven at 180°C degrees and bake for 5-8 minutes until cheese is melted.
5 Serve with fresh basil.
