This Bruschetta is packed with fresh flavours you will love. Creamy pesto base on a toasted sourdough bread, topped with fresh tomatoes and Fresh Mozzarella. YUM!

Ingredients

200g Fresh Mozzarella
6 slices pane di casa or sourdough bread
3 x ripe tomatoes, coarsely diced
4 tbsp olive oil
1/2 cup basil leaves
salt and pepper
Pesto
20g Grated Parmesan Tub
2 x garlic cloves
20g pine nuts
1/3 cup olive oil
4 cups basil leaves

Preparation

1 For the Pesto, place garlic, pine nuts and a pinch of salt into the bowl of a small food processor and blitz to form a coarse paste. Add basil and pulse to form a paste. Drizzle in olive oil with the motor running to emulsify. Add parmesan and pulse to combine. Season to taste with salt & pepper.
2 Preheat grill to med/ high. Slice and place the Fresh Mozzarella, tomatoes and basil into a medium bowl, add 2 tbsp olive oil, season with salt & pepper and mix well to combine. Drizzle the bread slices with 2 tbsp olive oil and toast both sides.
3 Spread the toasted bread with pesto and pile the bruschetta mix on top. Garnish with basil leaves.
