Ingredients

220g Bambini Bocconcini
4 sheets ready-made puff pastry (thawed)
1 egg (beaten)
3 medium red onions (diced)
200g smoked ham (optional)
200g tomato and pepper pasta sauce
pinch dried oregano

Preparation

1 Preheat the oven to 200 degrees Celsius. Use two sheets of ready-made puff pastry and slightly overlap at the edges (One roll makes 6 scrolls).
2 Dice onions and sweat on pan until caramelised. Remove from the heat.
3 Slice Bocconcini and finely chop the ham.
4 Spread pastry base with tomato and pepper sauce, sprinkle with ham followed by caramelised onion and sliced bocconcini. Dust with dried oregano and carefully roll into shape. Place the roll into the freezer for 15 minutes.
5 Cut both rolls into 6 pieces, brush the sides with egg wash and bake for 25 minutes or until golden.
