This Bruschetta is packed with fresh flavours you will love. Creamy pesto base on a toasted sourdough bread, topped with fresh tomatoes and our Fresh Mozzarella Slices. YUM!
|200g||Fresh Mozzarella Slices|
|6 slices||pane di casa or sourdough bread|
|3 x||ripe tomatoes, coarsely diced|
|4 tbsp||olive oil|
|1/2 cup||basil leaves|
|salt and pepper|
|20g||Grated Parmesan Tub|
|2 x||garlic cloves|
|1/3 cup||olive oil|
|4 cups||basil leaves|
|1||For the Pesto, place garlic, pine nuts and a pinch of salt into the bowl of a small food processor and blitz to form a coarse paste. Add basil and pulse to form a paste. Drizzle in olive oil with the motor running to emulsify. Add parmesan and pulse to combine. Season to taste with salt & pepper.|
|2||Preheat grill to med/ high. Place mozzarella, tomatoes and basil into a medium bowl, add 2 tbsp olive oil, season with salt & pepper and mix well to combine. Drizzle the bread slices with 2 tbsp olive oil and toast both sides.|
|3||Spread the toasted bread with pesto and pile the bruschetta mix on top. Garnish with basil leaves.|
