| 220g | Cherry Bocconcini |
| 400g | pasta (Farfalle) |
| 3 tbsp | high quality pesto |
| 1/4 cup | pasta water |
| 200g | cherry tomatoes, halved |
| 150g | olives, pitted and halved |
| 2 cups | chopped spinach or rocket |
| 1/2 bunch | basil leaves |
| 1/2 cup | pine nuts, toasted |
| pinch | salt and pepper |
| 1 | Cook the pasta as per packet instructions. Drain and reserve a small amount of the starchy pasta water. |
| 2 | Pour the cooked pasta into a salad bowl. Add the pesto and a small amount of the pasta water. Mix the salad until well combined. |
| 3 | Add the cherry tomatoes, olives, Cherry Bocconcini, spinach/rocket, basil, pine nuts and toss well. Season well with salt an pepper. Enjoy! |
