Olive, Cherry Tomato and Bocconcini Pasta Salad

Ingredients

220g Cherry Bocconcini
400g pasta (Farfalle)
3 tbsp high quality pesto
1/4 cup pasta water
200g cherry tomatoes, halved
150g olives, pitted and halved
2 cups chopped spinach or rocket
1/2 bunch basil leaves
1/2 cup pine nuts, toasted
pinch salt and pepper

Preparation

1 Cook the pasta as per packet instructions. Drain and reserve a small amount of the starchy pasta water.
2 Pour the cooked pasta into a salad bowl. Add the pesto and a small amount of the pasta water. Mix the salad until well combined.
3 Add the cherry tomatoes, olives, Cherry Bocconcini, spinach/rocket, basil, pine nuts and toss well. Season well with salt an pepper. Enjoy!
