Haloumi & Peach Salad

Notes

Simple, nutritious and delicious!  This Peach & Haloumi Salad makes a great summer lunch or dinner – use as a side dish or enjoy as a meal on its own.   Summer is all about celebrating flavours, colours and taste!

This is the perfect dish that combines the sweetness of summer fruits, the nutty textures from the beans and almonds and the natural salty notes from our Haloumi.

Ingredients

1 pack / 6 slices Haloumi
2 x Peaches
150 gr Green Beans
1/4 cup Whole Almonds
2 sprigs Mint
Lemon Juice

Preparation

1 Bring a saucepan of water to the boil. Blanch beans and then place in a bowl of ice cold water. Set aside
2 Using a non-stick fry pan, lightly brown the almonds. Set aside & once cooled, roughly chop.
3 Heat a grill pan over high heat. Slice each peach into 8 pieces and grill until golden and soft. Remove from heat
4 Wipe down your grill pan carefully and place back onto the heat. Slice Haloumi and grill on both sides until golden.

Tip: You don’t need any oil when frying Haloumi and in fact dry-frying helps create a lovely golden crust on the outside of the cheese, whilst keeping the inside soft.
5 Assemble all your salad ingredients. Top with Haloumi, mint leaves and a squeeze of lemon juice
